In 2006, I once made the Lebkuchen by myself. But that is made by imported Austria's Ginger Bread Mix.(Below image) |

2. Charge ratio: Basic ratio and step below |

Mix one egg and honey of 50G into a mixed liquid |
Common egg is about 40G |

Tip the mixed liquid into the mixed powder, and roll into a mass by kneading up to become a well situated paste for roast. Then split it to little paste which weight is about 20-40G of every paste, and press them to little round cake which thickness is about 4-6 mm (It can be put the freeze refrigeration 4-12 hours for get into shape before bake) |
The mix between liquid and mixed power must be slow and step by step, so to avoid the paste become too soft |

3. Roasting: |
001 |
Set up the temperature of the oven is 150 centigrade and 40 minutes. First turn on oven and warm-up 5 minutes |

002 |
Put 2 sheets Aluminum foil above bake pan, arrange the little cake above, keep a bigger interval between cakes to avoid conglutination. Again Put 2 sheets Aluminum foil above cakes to avoid part is singed |
Below the cakes can be stained with flour or mixed powder to avoid conglutination |
003 |
Put the bake pan into the oven and start bake |

004 |
You can open the door of the oven for look at the cakes after 20 minutes. If without singed appearance , continue to bake about 5-10 minutes, then take out the bake pan and turn off the oven |

005 |
Quickly put the hot cakes into a iron box with sealed lid and cover in the lid. After fully cooling, the cakes is edible |

4. A few important problem: |
4-1 About Charge ratio: About is basic ratio. You can change it according to your favorite |
Flour: It is better to use middle-gluten flour. You also can mix into 10-20% corn flour or 3-5% rye flour into the wheat flour |
spicery: Total quantity should be less 2% to avoid run counter to your desire. You could try to add other spicery as Nutmeg, vanilla, Oregano, Allspice....or milk powder, Raisin, Almond etc. |
Other: The ratio of brown sugar and honey can be changed. But the honey is too many, the flour need more to avoid the paste too soft. Icing sugar and Black or white Chocolate powder is for glaze,it is as personal favour |

4-2 About bake: |
Holding a even heating condition. Because the family oven is very little, its radiant heat and conducting heat is very much, so you need to add Aluminum foil in the top and bottom of the cakes to avoid part is singed |
the temperature of the oven. It can be 150-200 centigrade. When 150 centigrade, the bake is about 25-30 minutes. The cake will be more spongy similar pudding. If you need the cake is more harden, can raise the temperature to 180-200 centigrade, but the bake time should be reduced to 8-15 minutes |
Keep humidity after bake. This is very important, it will make the cake is soft and good to eat. Of course, if you want a hard cake, you can directly cooling the cake in the air. |
4-3 Glaze: The white chocolate is better, but black chocolate or iceing sugar also are enable. First use a bit grappa(brandy) or whisky, rum, wine, adding chocolate (powder od piece), slowly heating for melting it, also can add some iceing sugar or milk powder, flour and water according to personal taste and favorate. then put cool Lebkuchen into the melted chocolate or icing sugar for glazing. Get out it and dry by airing for 1-2 days. Its taste will be delicious for the Lebkuchen glazed write chocolate! |

Last word: The oven is a high temperature and open fire equipment, Please attention your safety !!! |
